Ingredients
1 Rotisserie chicken - deboned and shredded
1 Medium onion
1 large can of red enchilada sauce
1 small can of green enchilada sauce
1 tbsp minced garlic
5 wedges Laughing Cow cheese
1 bag mini bell peppers, seeded and sliced into strips
10 Mission Carb Smart Tortilla shells
1.5 bags shredded cheese (Mexican blend or your choice)
Preparation
Preheat oven to 350 degrees.
Sauté peppers, onion, and garlic.
Place shredded chicken in a pan with the sautéed vegetables and add a large can of enchilada sauce. Stir well and let simmer for 5 minutes.
While that is simmering, take the Laughing Cow cheese and spread it down the center of each tortilla shell.
In a greased 9 x 12 pan/dish, take and stuff your tortilla shells. Add shredded cheese and fold like a burrito. Place seam side down and pack them in tightly.
Pour a small can of green enchilada sauce over the top of the shells and add the remaining cheese.
Cover with foil and bake for 40 minutes. Remove the foil and brown the cheese.
This just needs to heat through because everything is already cooked.
